The Long Island Cheese Pumpkin has light burnt sienna-colored rind, a distinctive stem, and flesh that is raw sienna-colored, dense, sweet, earthy, and savory.

It is very versatile and most parts of the plant are edible – shell, flesh, seeds, and flowers. Ripe flesh can be boiled, baked, steamed, pickled, or roasted, and enjoyed in soups, purees, desserts, preserves, pasta, and stews.

This is the most wonderful Pumpkin I’ve ever used. It is absolutely perfect for Pumpkin Pie, Pumpkin Bread, Pumpkin Soup, and a slew of other favorites.

It has the most wonderful aroma, as it roasts in your oven, and it will cast a spell over everyone in you home.

2 & 1/2 cups my organic all-purpose flour blend (below)
1/2 organic Coconut Flour
2 teaspoons baking soda
1 teaspoons salt
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1/2 teaspoon ground ginger
2 cups butternut squash or Pumpkin purée
2 cups organic granulated sugar
2 sticks of grass fed organic salted butter
4 large eggs, beaten
1 cup organic cultured buttermilk whole fat

Preparation:
Preheat oven to 350 degrees F. Place oven rack in center of oven. Generously grease 2 9×5-inch loaf pans.

In a medium bowl, sift together the flour, baking soda, salt, cinnamon, cloves, nutmeg, allspice, and ginger; set aside.

In a large bowl, combine butternut squash or Pumpkin puree, sugar, butter, eggs, and buttermilk, until well blended. Add the flour mixture and stir until just blended.

Pour batter into prepared loaf pan and bake 50 to 60 minutes or until a toothpick inserted in the center comes out clean. NOTE: Be sure and poke the toothpick to the center of the cake to check for doneness.
