Group Buy FCLO & Collagen/Gelatin

This weekend we will have our Group Buy for Green Pasture products (Fermented Cod Liver Oil (FCLO), High Vitamin Butter Oil, Skate Liver Oil

and Great Lakes Gelatin Collagen!

All currently available products (as of today) will be listed on the market site tomorrow for ordering.

We order FCLO monthly and collagen every 2 months. One can of collagen is a 2 month supply for 1 person. Please keep this in mind when ordering.

The prices include our discounted group buy price, shipping, fees and taxes.

THIS WILL NOT BE AVAILABLE FOR PICK UP THIS TUESDAY.

I will place our group order on Monday and expect it will be available for pick up within 2 weeks. This is a prepaid pre-order, so payment is expected this Tuesday. If you are only ordering Green Pasture or Great Lakes products this week, please drop a check in the mail or online payment on the co-op market website.

Market News

There are lots of fresh veggies and fruits- (berries, cantaloupe, watermelon) on the market this week. It’s amazing what some rain can do!!

Don’t miss out on the flavorful heirloom tomatoes, they won’t last long! My family enjoyed them simply sliced with just a sprinkle of sea salt, olive oil, Basil- Red Rubin from Caley’s and a dash of A&A Alta Cucina Crema Balsamic Vingar. It was beautiful and delicious! The purple and green hues from the basil really brought out the different colors of the tomatoes and it looked like a work of art. Made an impressive plate for 5 minutes of work!

Also, great time to stock up to have some good tomatoes for all the soups and stews this winter! TIP: If you are not a canner, you can actually freeze tomatoes whole- no need to blanch and peel. When you defrost them the skin slips right off.

Wilderness Family Natural Group Buy

If you ordered items in our Wilderness Family Natural group buy, your items will be at pick up this Tuesday. If you can’t pick up I will keep until you can. These items are exempt from our “no show/donate” policy.

She has been helping me set up the market for the past 4 years and is one of the reasons why the market runs so smoothly on Tuesdays. Most times she gets to the warehouse even before I do! She will be moving to south Georgia soon and will be dearly missed! Hoping to get her back once a month when she stocks up on co-op goodies!

Collagen/Gelatin & FCLO Info

Great Lakes Gelatin (the Green can) Collagen Hydrolysate (beef kosher) Unflavored

Gelatin (also known as cooked collagen) has wonderful anti-inflammatory and anti-aging qualities, as it helps to fill in the missing amino acids (the building blocks of proteins) in the standard American diet. This is a completely different from the jiggly gelatin product most of us grew up eating as kids.

Homemade bone broth is chock full of gelatin and very nutrient dense but Great Lakes Gelatin- Collagen is a convenient way to get gelatin consistently into your diet.

What is Collagen Hydrolysate?

Hydrolyzed Collagen is the unique combination of amino acids in concentrated levels that promotes rapid re-production of blood cells for healing and conditioning over other proteins especially for bone and joint health care. How do I use this product?
You can mix it in drinks, shakes, smoothies, or add a tablespoon to your favorite recipe to give it an anti-inflammatory protein boost. It will dissolve in cold liquids very easily.

How Much Do You Need?
Recommended dosage: Take one rounded tablespoon (10-12 g) in the morning, and the same amount before going to bed in the late evening which will help reduce appetite. This product has a low molecular weight so it will dissolve in cold, warm, or hot liquids.

Important Note: Remember not to get too carried away with gelatin. Adding too much too quickly can cause digestive issues: bloating, loss of appetite, stomach ache are just a few side effects.

It’s important to remember that more gelatin is not always better, especially if you are adding it to your diet for the first time.

Gelatin should be used in addition to a nutrient dense diet and not to replace real food like homemade bone broths and grass fed meats.

Jason was very pleased with the shrimp orders last week. We decided that he would come on a monthly basis. The shrimp he brought us literally just came out of the water and were amazing. My kids said my shrimp and grits were the best they’ve ever had! I will send reminders when it is wild caught shrimp time again but mark your calendars for July 22nd!

Recipes

Here are a couple recipes using some of the fresh veggies we have this week on the market. Feel free to forward me some of your favorite recipes!

FRESH SQUASH CASSEROLE

1 pound squash/zucchini mix sliced
1/2 medium onion chopped
2-3 Tbsp grass fed butter
1/2 cup Parmesan cheese
1 egg
1 dollop mayonnaise or sour cream
2 tsp dried basil or 1 TBSP fresh basil finely chopped
1 tsp dried parsley
1 tsp sea salt
1/4 tsp freshly cracked pepper
chicken/veggie stock (if needed)

Preheat oven to 350
Melt butter in a pot adding a little salt until combined. Add squash/zucchini and stir to coat well. Cover and cook on low heat until squash is tender. Remove from heat, add the chopped onions and cover while gathering the other ingredients in a bowl. Drain any liquid from the cooked squash. Combine the remaining ingredients with the squash in the pot, reserving enough Parmesan to sprinkle on top. The consistency should be stew-like so add a little chicken stock if necessary to get to this consistency. Put mixture into a greased pan, sprinkle with remaining Parmesan cheese and bake for 30 -35 minutes or until bubbly and browned edges. You can sprinkle with panko, bread crumbs or crackers if desired before you bake. Enjoy!

SHORTCUT FRIED GREEN TOMATOES

SERVES: 4

INGREDIENTS
For the Dipping Sauce
½ cup sour cream
2 teaspoons lemon juice
¼ teaspoon garlic powder
For the Tomatoes
2 green tomatoes, weighing 12 – 14 ounces total
2/3 cup finely ground whole-grain cornmeal
Clarified butter (ghee), coconut oil or other high-temperature cooking oil
Salt and pepper, to taste
INSTRUCTIONS
To make the dipping sauce, whisk together the sour cream, lemon juice, and garlic powder in a small bowl. Set aside.
Thinly slice the green tomatoes (about ¼-inch thick) and dredge both sides in the cornmeal.
Heat a thin layer of clarified butter (ghee) in a cast iron skillet over medium heat. Cook in batches until tender when pierced with a fork and both sides are golden brown, a couple minutes per side. To prevent the skillet from getting dry, add more ghee when necessary. Wipe out the skillet in-between batches (otherwise the crumbs will burn).
Transfer to a paper-towel lined plate, season with salt and pepper, and serve warm with dipping sauce.

PALEO FRIED GREEN TOMATOES
Prep:8 minutes Cook:12 minutes to 15 minutes

Ingredients
1/4 cup Coconut Flour
2 whole Pastured Eggs
2 Tomato, green
3 Bacon, strips
1 tsp Black Pepper
1/2 tsp Salt
Shop

Process
Cook bacon over medium heat, allow to cool, then crumble.
Reserve bacon grease for cooking tomatoes.
Clean tomatoes, and slice into 1/8-inch-thick pieces.
Whisk the eggs in a shallow dish.
Dip tomato slices in egg wash, then dredge in coconut flour.
Sauté tomato slices in bacon fat for 2–3 minutes per side over medium heat.
Remove from heat, sprinkle with salt and pepper.
Serve with crumbled bacon.

New Vendor: Certified Wild Caught Shrimp

I am very excited to welcome Jason from St. Simons Island Shrimp Specialist to our family of growers and producers!! He will provide the market Ocean to Table, HACCP Certified Wild Caught Georgia Sweet White Shrimp weekly starting this weekend.

He will be offering fresh and frozen this week. These same shrimp sell for $12.99 per pound at our local grocers on the coast of Georgia. If you can find them in the Atlanta area they will be at least $15 per pound. Take advantage of the great price of $9.99 per lb!

I’m looking forward to shrimp scampi, boiled shrimp, grilled shrimp kabobs, shrimp and grits, shrimp jambalaya, shrimp salad … OK now I’m starting to sound like Bubba from Forest Gump but you get the point!

Wild Caught Shrimp is an excellent source of Tryptophan (an essential amino acid), Vitamin B12, Healthful fats, including omega-3, saturated fat and cholesterol, Selenium, Protein, an Astaxanthin.

If you are a seafood lover you are won’t be disappointed!

Tip: The frozen shrimp is flash frozen right after the catch and will be in a big block. If you only need a pound or so you can run part of the block under cold water and the shrimp will fall out. You can store the remaining frozen part of the block in the freezer until next time.

Group Buy Change – Wilderness Family Naturals this weekend

This weekend we will be taking orders for organic coconut oils and pantry items from Wilderness Family Naturals. These items include healthy oils, spices, cacao, grains, rice, coconut products, Nuts (Raw, Soaked & Dried, Certified Organic, Mixed) and natural sweeteners.

So, I know the original calendar had FCLO and collagen this weekend but I just got an email from Wilderness Family Naturals that they are having a buying club sale! I want to pass on this savings to all of you so I’m switching the group buy for Wilderness Family Naturals to THIS WEEKEND. Since I just found out, I have not adjusted pricing on the market site yet. This is a very tedious task and I’m going to try to get them updated by the market opening tomorrow morning but realistically I probably won’t get a chance to fix pricing until Friday sometime. Just know, even if you order before I update the pricing, I will adjust your order total before Tuesday when payment is due. Expect about a 15% discount. I will have (SALE) listings available as soon as I can!

These Group Buy Items WILL NOT be at pick up this Tuesday. I will place our group buy order after I receive payment on Tuesday. This is a pre-paid pre-order and payment is expected this Tuesday at pick or you can mail a check.

Please expect at least 2 weeks for this order to arrive.

Our group buy for Wilderness Family Natural products is every 3 to 4 months so please plan accordingly.
